Reset Raw! (feat. alcohol to keep your NYE vibe alive)
- Happy New Year ! One of my Resolutions is to "Chefsperiment" more through my nomadic life (clarified as you read further :P), and to actually share them here for all of you.
I always complained, "I just don't have time to blog." With my master's, full-time job, and commute keeping me busy until the end of 2015, I basically neglected Chefsperiment. My pretty awesome workplace offered healthy, organic catering and snacks, and my superhero mom would have a healthy meal ready by the time I came home from work. #spoiled but #grateful.
And look what happened now. More than a year passed, and though I am no longer writing papers after work, I am now busy with this crazy, amazing thing called Remote Year- it's a program wherein 75 of us digital nomads travel to a new city each month for a whole year, while working our jobs virtually. So my reason for not Chefsperimenting in 2016 was, "I need to fully explore the city I'm living in after work, and try local cuisine." #grateful and #StillBusy
But someone once told me, "you DO have time." You have the same number of hours in a day that Einstein or anyone else great and famous did. Not having time isn't an excuse. It's that Chefsperiment wasn't your priority. And replacing "I don't have time" with "it's not my priority," really put things into perspective, because eating clean and cooking and eating some really quirky and unique combinations are things I enjoy and take pride in. Plus we're always busy and will always be filling up our calendars with endless things.
So cheers to 2017 and constantly reflecting on our priorities and ensuring they're in line with our passions and goals. (thanks @selfienomics for the inspiration and realization.. <-- Selfienomics is basically an essential read of the century)!
And with that little Happy New Year Preach, say hello to Raw Vegan Vodka Zoodles-- a spin-off of any Zoodle dish (Zucchini Noodles), which would cost you at least 13 dollars or pounds at a restaurant. To make your health-related resolution a bit more fun, and to keep the NYE party vibe raging through this year, I thought I'd add some alcohol to the mix!
What You'll Need:
- Zucchini Noodles (You can spiralize your own or buy them pre-zoodled!)
- 2 Red Bell Peppers, Chopped
- 5 cloves of garlic, minced (+/- depending on how garlicky you want this)
- about 2-3 fistfulls of raw cashews, chopped
- 1/4 cup extra virgin olive oil
- a squeeze of lemon
- 2 shots of vodka
- a splash of almond milk
- seasonings to taste: sea salt, black pepper, red chilli
- 1/4 red onion, chopped
- 3-4 watermelon radishes, chopped into thin discs
- sprinkle of sea salt, red chilli, and italian seasoning
And literally all you're going to do is blend together everything under "Sauce" in your blender/smoothie maker/food processor (I live out of a suitcase, so this was done in my travel-sized blender), and pour it over your zoodles.
Arrange the radishes into some semblance of a flower or cluster at the center of your dish, sprinkle in the chopped onions and your spices, et voila! You have a beautifully colored, gourmet looking (and tasting obvs) dish in 15 minutes tops! Hits the spot just like Penne a la vodka, with cashews and EVOO making for a rich, creamy base but much healthier and fresher!
