An Amazing Accident: Nutella But Better!

Happy Fridayyy! After feasting on tacos and chilaquiles of all kinds- classic, modern, healthy +vegan too, (thanks Mexico City!), I figured it was high time to get back into clean and creative cooking. And so that's what I had been doing while MIA. Here's one of the amazing accidents that took place in my kitchen earlier this week. To switch up my green/fruit + veg smoothie routine, I was about to make a vegan, savory chocolate smoothie (yet another excuse to use my nut butter). Side note: the next chefsperiment is actually a smoothie). And because I tend to totally eyeball things, I had a little less liquid, and my nut butter was raw hazelnut butter...so I basically made nutella.... Read More

Pick-Me-Up Porridge

Porridge and Pick-Me-Up? May seem like a major juxtaposition, if you didn't have fond memories of porridge growing up or associate it with sick-people-food. Or maybe you did because of Pease Porridge Hot . Nursery rhymes anyone? It's okay, I also did a double take when I saw porridge listed on a menu at a chic looking cafe (and it was great!). But it really doesn't have look or taste like the sticky gook. It's really just a mashup of ingredients that taste really great together with a warm base. Put what you love in it and make it truly heartwarming (body warming #obvs)- it can be savory too! The more visually pleasing, the better! And the base is not the expected- sorry oats- but rather.... If Rice Cakes were Royal.

Find yourself shopping for healthy snacks like rice cakes, only to stare at them a day later trying to understand why the hell you bought them? I did. I still do sometimes. But the sheer thought of the agonizing pain resulting from a dissatisfying snack that tastes like air will forced me to get creative and really deck these things out. I really mean deck these things out. We're not just talking a nut butter and chopped fruit or avocado and evoo combos, (though those are pretty great and will do the trick). But here's something that'll give a new meaning to "variety is the spice of life," and erase those Regret of the Rice Cake feels. Read More

Can You Brave This Brunch?

How many times have you gone out to brunch and a) did not know what to order because everything looked so damn good and b) ultimately narrowed down your options to 1 savory and 1 sweet? Yeah thought so. Too many to count. The issue isn't an issue if your friends are on the same page and order a variety of dishes that you wanted to try. But if not, do you just settle for one of the few plates you had your mind on, or just yolo it and order two? I'll leave you to ponder that, while I hopefully let this 2-in-1 sweet and savory brunch recipe saves your waist and bank account! Read More

Reset Raw! (feat. alcohol to keep your NYE vibe alive)

Happy New Year ! One of my Resolutions is to "Chefsperiment" more through my nomadic life (clarified as you read further :P), and to actually share them here for all of you. I always complained, "I just don't have time to blog." With my master's, full-time job, and commute keeping me busy until the end of 2015, I basically neglected Chefsperiment. My pretty awesome workplace offered healthy, organic catering and snacks, and my superhero mom would have a healthy meal ready by the time I came home from work. #spoiled but #grateful. And look what happened now. Read More

Anything but your Basic Biscotti.

I can’t stay away from alliteration. And I also…I just jumped on the “basic” bandwagon. Well now that it’s out of my system, we can move on. So though the lunch menu at work changes on a daily basis, breakfast and snack supplies remain constant, so I’m really trying to get innovative here with the usual bunch—almond butter, some sort of sprouted bread, and coconut. I’m really proud of this one though because it’s so simple yet super chic and scrumptious #obvs. Read More

8 Simple Rules to your Oat to Joy!

Bam! Double whammy. See what I did there? Well in case you didn't, that was my reference to the early millennial TV show, 8 Simple Rules ...for dating my teenage daughter (which you should totally watch for a good laugh) and Ode to Joy- the ode by German Poet, Friedrich Schiller, that you learned how to play on the piano when you were 5. Anyway! As promised quite a while ago...here are 8 ways to transform this mundane grain into deliciously healthy meals or snacks! Read More

Organic Toasted Apple Crostinis

I don't have a sweet tooth. I have sweet teeth. And in a separate post, I'll rant to you why sugar is really your enemy and not fat (unprocessed, mind you)- but for now, here's an express snack that'll satisfy your sweet cravings, WITHOUT any sugar!

Toasted Apple Crostinis

I did this in my office kitchen just now in oh, 15 minutes? The oven did all the work.

You'll need:

1 apple, sliced  (in any shape or form, as you can see from above...4 cuts on the periphery, and I ate the rest!)
1 tbsp organic lemon juice (sprinkle/rub onto the apple slices)*
1/2 tbsp raw honey (spread on your apple slices)
Cinnamon & Sea Salt to drizzle on
Granola to sprinkle on top and add a nice crunch!
Prep time was 5 minutes, and oven time was about 10.  You can take out your crostinis when they're a nice golden brown, or depending on how cooked you like them!  And there you have it...organic, gluten-free, AND vegan treats!

*lemon juice helps keep the integrity of the apple an prevents over-browning (oxidation).

Also, as always the amounts are mere guesstimations- feel free to adjust/subsitute as you wish!
