If Rice Cakes were Royal.

Find yourself shopping for healthy snacks like rice cakes, only to stare at them a day later trying to understand why the hell you bought them? I did. I still do sometimes. But the sheer thought of the agonizing pain resulting from a dissatisfying snack that tastes like air will forced me to get creative and really deck these things out. I really mean deck these things out. We're not just talking a nut butter and chopped fruit or avocado and evoo combos, (though those are pretty great and will do the trick). KDT for the Modern and "Sanskaari"

I KNOW this is overused and you probably heard it a million times, so hear it once more: "you are what you eat." #SoBasic I know. But oh well. Whether you believe that or not, for this post's sake, we will assume that the above statement is true. Anything but your Basic Biscotti.

I can’t stay away from alliteration. And I also…I just jumped on the “basic” bandwagon. Well now that it’s out of my system, we can move on. So though the lunch menu at work changes on a daily basis, breakfast and snack supplies remain constant, so I’m really trying to get innovative here with the usual bunch—almond butter, some sort of sprouted bread, and coconut. Organic Toasted Apple Crostinis

I don't have a sweet tooth. I have sweet teeth. And in a separate post, I'll rant to you why sugar is really your enemy and not fat (unprocessed, mind you)- but for now, here's an express snack that'll satisfy your sweet cravings, WITHOUT any sugar!

Toasted Apple Crostinis

I did this in my office kitchen just now in oh, 15 minutes? The oven did all the work.

You'll need:

1 apple, sliced  (in any shape or form, as you can see from above...4 cuts on the periphery, and I ate the rest!)
1 tbsp organic lemon juice (sprinkle/rub onto the apple slices)* 
1/2 tbsp raw honey (spread on your apple slices)
Cinnamon & Sea Salt to drizzle on 
Granola to sprinkle on top and add a nice crunch!
Prep time was 5 minutes, and oven time was about 10.  You can take out your crostinis when they're a nice golden brown, or depending on how cooked you like them!  And there you have, gluten-free, AND vegan treats!


*lemon juice helps keep the integrity of the apple an prevents over-browning (oxidation).

Also, as always the amounts are mere guesstimations- feel free to adjust/subsitute as you wish!

Get Red Carpet Ready

Academy Awards or no Academy Awards, it's nice to want to get red carpet ready- no that does not equate to or isn't limited to looking lean and sculpted.  It's a great goal to work towards to feel your best, increase love and appreciation for you, and flaunt that wherever you are and go.

But since the Oscars will be taking place in a couple of hours, it is quite fitting to chefsperiment this hors-d'oeuvre, to entertain your guests AND your health!

"Kiwicado Stuffed Sweet Peppers"

"Kiwicado" Stuffed Sweet Peppers

You'll need:

- 4 sweet peppers, washed & tops chopped

- 1 avocado, peeled and chopped

- 1 kiwi, peeled and chopped

- 1/4 red onion, finely chopped

- 1 tbsp extra virgin olive oil

- 1 apple sliced (pacific rose is delish!), you'll only need 12 slices, but you can use the rest to dip with the leftover guac

- lime, sea salt, black pepper, basil, freshly chopped green chili to taste

Servings: 4 

Prep Time: 20 minutes (this one's a bit long because of the chopping and presentation)

1. Wash the sweet peppers, chop the tops, and make a slice on one side to make stuffing easier and to prevent the "kiwicado" guac from oozing out.

2. Mash the avocado with a fork/masher, squeeze your lime, sprinkle the sea salt to prevent browning

3. Add the chopped onion, green chili, kiwi and combine.  Sprinkle the remaining seasonings.

4. Stuff the peppers with the "kiwicado." Place one sliced apple to fill in the cut you made on the sweet pepper, and the other two within the pepper, facing the other way (for a fancy look!)

Et Voila!  One of your appetizers taken care of at your party.  There's still time!  And remember, the nutrients from your clean, balanced diet will give you a sustainable red carpet look, with exercise to maintain your fitness- not a processed-food filled diet with a ton of exercise!

Be YOURS First.

Be Mine.  Be My Valentine.  Will You Be My Valentine?

There are so many versions of these Valentine’s Day requests that you have probably heard of, said to someone, sent to someone, have had them spoken to you or sent to you, or eaten…  like these candy hearts.  

And all that is sweet.  But amidst planning the perfect night out or in, buying flowers & chocolates, contemplating the most romantic gift, meticulously putting yourself together, or finding someone to say “be mine to”…don’t forget to be yours.  Be YOUR own valentine before you become someone else’s—not just on Valentine’s Day, but every day.  Since we’re already calling special attention to romance and love, take the day as a reminder to love yourself.

It’s rather instinctual to mold yourself into what others perceive as desirable—not just your partner or spouse— whether it is to have them reciprocate your love or to make them happy.  In the process of going at great lengths to please them, we neglect our needs, wants, and “self-dates.” Adjustment and flexibility are needed in all types of relationships, but self-love is paramount and provides for a strong foundation in nurturing relationships.  And self-dates boost your mood, confidence, long-term happiness, and the vibe you exude.

So don’t stress!  Take a deep breath and some time to be on date with yourself.  Maybe a bubble bath with rose petals?  Lie in bed with candles while listening to some zen music? A relaxing yoga sesson?  Or maybe if you’re real short on time before your V-day plans…a chefsperiment made with your very own hands?   That's the least you can do. Whatever it is, relish it…and say it out loud…I LOVE ME!

So my treat to you, for a self-date, is my absolute FAVORITE chefsperiment...”Nutty Buttery Banana Batter!”

You'll need to:

- Chop 1 banana

- Add 1-2 tablespoons (or dollops!) of raw, organic almond butter (any version of nut butter you might have)

- Sprinkle cinnamon, nutmeg, and sea salt

- Add walnuts and/or chia seeds for a nice crunch factor

- Splash in some rice milk (or any milk you prefer)

Mix together until you achieve a cookie-batter like consistency and indulge!  Happy Valentine's Day!
