Can You Brave This Brunch?

How many times have you gone out to brunch and a) did not know what to order because everything looked so damn good and b) ultimately narrowed down your options to 1 savory and 1 sweet?

Yeah thought so. Too many to count. The issue isn't an issue if your friends are on the same page and order a variety of dishes that you wanted to try. But if not, do you just settle for one of the few plates you had your mind on, or just yolo it and order two?

I'll leave you to ponder that, while I hopefully let this 2-in-1 sweet & savory brunch recipe preserve your longevity and bank account!

Chocolate Sea-Salt Olive Oil Pancakes

Whaaaat? Yes.

This is taking a brunch classic to the next level, playing off of the olive oil ice cream (and sometimes chocolate-evoo desserts) concept and ! Inspired by Cassey Ho's protein pancakes from her Cheap Clean Eats series, these are gluten-free pancakes made with a simple base of banana and egg, blended together.  


Beginner's Challenge (1)

 1. Start by whipping the eggs until nice and fluffy, and combine all ingredients into your smoothie maker/blender until the batter is smooth.  Of course, taste-test and adjust ingredient amounts to your liking!

2. Spread a tablespoon of EVOO on your pan on medium heat, and pour a bit of the batter once the oil becomes more viscous.  Let it sit for 2 minutes or until slightly browned, and flip and let it sit for another 2.  Repeat this step with the remaining batter.  
3. Once done, you can add toppings as you please- I spread a bit of almond butter at the center of mine, and garnished with dates, a sprinkle of sea salt, and a drizzle of EVOO!
