Three Sweet Ways to Uplift Yourself!

Happy Valentine's/Galentine's, and/or Anti-Valentine's Day! Whether you're scrambling for last-minute recipes for your date night in, girls night in, a potluck party, or just looking to have a self-pampering, me-time sesh, here are THREE amazing desserts to turn up your health and that warm and fuzzy feeling inside- for yourself, if nobody else!

Getting right to it, we've got the 1) Raw Apple Crumble- Pulled Apart, 2) Love Pumpkin, and 3) Berry Better Butter Bowl (tongue twisters anyone ?)
g'day!
1. Raw Apple Crumble- Pulled Apart (pictured left)

Ingredients:
- 1 Granny Smith Apple (Green)
- A handful of pumpkin seeds
- 1 tbsp raw honey
- 1 tbsp of raw walnut butter
- a tiny splash of coconut milk
- sea salt and cinnamon to taste
Directions:
1. Chop up your apple.
2. Drizzle on the raw honey, sprinkle your sea salt, cinnamon, and pumpkin seeds, and splash just a teensy bit of the coconut milk for moisture
3. Spoon out raw walnut butter and place on the side and Enjoy!
Super minimalist, moist but with a crunch, and overall a nice mix of tart, wintery spicy, sweetness, and richness flavors at play- healthy, guilt-free comfort food!

2. Love Pumpkin (pictured lower right)

Ingredients:
- Half pumpkin (baked), or organic pumpkin puree
- 1/2 cup fresh coconut milk or organic coconut cream
- 2-3 tbsp raw honey to taste
- 2 tbsp raw walnut butter
- sea salt and cinnamon to taste
- optional: gluten-free coconut cookies & shredded coconut
Directions:
1. So I was fortunate to find that half baked pumpkins are freshly sold across Europe throughout fall and winter, but organic pumpkin puree from a health food store would be fine!  If you've got the latter, just take it out and place the puree onto a plate. Those with the freshly baked pumpkin, it should come right off the peel, after which you can put it in a colander/strainer and press through with the back of a fork.  The smooth part of the pumpkin will fall nicely onto your plate.
2. Add your honey, walnut butter, and coconut milk/cream into the pumpkin puree and mix well (should be fine with a spoon, or a blender/mixer is fine too).
3. Season with sea salt and cinnamon. If you have got gluten-free coconut cookies and/or shredded coconut, you can crumble one cookie evenly over the plate and sprinkle the coconut, and finally place another cookie at the center of your dish.
Rich and creamy, with healthy fat, protein, B vitamins, and healthy sweetness (raw honey > other honey/syrups). It's like Thanksgiving less the resulting food baby!

3.   Berry Better Butter Bowl (pictured top right)

Ingredients:
- 5 strawberries, chopped
- a handful of blueberries
- 3-5 mint leaves, chopped
- 1/2 - 1 tsp of freshly minced ginger
- 1-2 tbsp raw cashew butter
Directions:
1. Really only one step here- combine the berries, top with the mint and ginger, and layer in your cashew butter!
Super simple, but amazingly hits the spot with the cooling and warming flavors from the mint and ginger, respectively, and the naturally sweet and creamy cashew butter. If you're not a fruit person, you'll be come one because of this!

Chocolate and roses are cool and all, but so are all the magical things you're capable of creating, if you let your heart, mind, and spirit run wild! Not just in the kitchen but in every aspect of your life.

Lots of love (& don't forget SELF-LOVE)!
