Pick-Me-Up Porridge

Porridge and Pick-Me-Up? May seem like a major juxtaposition, if you didn't have fond memories of porridge growing up or associate it with sick-people-food. Or maybe you did because of Pease Porridge Hot . Nursery rhymes anyone? It's okay, I also did a double take when I saw porridge listed on a menu at a chic looking cafe (and it was great!). But it really doesn't have look or taste like the sticky gook. It's really just a mashup of ingredients that taste really great together with a warm base. If Rice Cakes were Royal.

Find yourself shopping for healthy snacks like rice cakes, only to stare at them a day later trying to understand why the hell you bought them? I did. I still do sometimes. But the sheer thought of the agonizing pain resulting from a dissatisfying snack that tastes like air will forced me to get creative and really deck these things out. I really mean deck these things out. We're not just talking a nut butter and chopped fruit or avocado and evoo combos, (though those are pretty great and will do the trick). Can You Brave This Brunch?

How many times have you gone out to brunch and a) did not know what to order because everything looked so damn good and b) ultimately narrowed down your options to 1 savory and 1 sweet? Yeah thought so. Too many to count. The issue isn't an issue if your friends are on the same page and order a variety of dishes that you wanted to try. Anything but your Basic Biscotti.

I can’t stay away from alliteration. And I also…I just jumped on the “basic” bandwagon. Well now that it’s out of my system, we can move on. Organic Toasted Apple Crostinis

I don't have a sweet tooth. I have sweet teeth. And in a separate post, I'll rant to you why sugar is really your enemy and not fat (unprocessed, mind you)- but for now, here's an express snack that'll satisfy your sweet cravings, WITHOUT any sugar!

Toasted Apple Crostinis

I did this in my office kitchen just now in oh, 15 minutes? The oven did all the work.

You'll need:

1 apple, sliced  (in any shape or form, as you can see from above...4 cuts on the periphery, and I ate the rest!)
1 tbsp organic lemon juice (sprinkle/rub onto the apple slices)* 
1/2 tbsp raw honey (spread on your apple slices)
Cinnamon & Sea Salt to drizzle on 
Granola to sprinkle on top and add a nice crunch!
Prep time was 5 minutes, and oven time was about 10.  You can take out your crostinis when they're a nice golden brown, or depending on how cooked you like them!  And there you have it...organic, gluten-free, AND vegan treats!

 

*lemon juice helps keep the integrity of the apple an prevents over-browning (oxidation).

Also, as always the amounts are mere guesstimations- feel free to adjust/subsitute as you wish!

Unexpected Creativity

Well it's been long!  A retreat to Miami a long with lots of schoolwork and exams have kept me busy- I have chefsperimented during that time to keep me sane- since it's a passion and passions should be priorities- but I am saving those for a mega-recipe post to come!

Anyways...the main thing I wanted to share with you is this wonderful chefsperiment, which turned out to be a success, when I LEAST expected it.  I wasn't exactly planning on chefsperimenting when I stepped away from my desk yesterday.  In fact, I was in a rather dismal mood and preoccupied, and probably hungry, when I mechanically started whipping up seemingly unfitting ingredients together into this Tropical Toast and ...Friendly Fat Toast?  Haha, I couldn't think of a better name.  But it was so surprising, because I usually am  not able to healthily divert myself for a mental recharge break amidst stress, and this seemed to be like an automatic mechanism to give me a therapeutic burst of positivity.  


So apart from trying out these at home, I want you to also let yourself unwind and unleash your creativity by listening to what your body is telling you to do.  If you're not sure or have access to a go-to therapeutic activity at work or at school, just taking a quick walk and a deep breath will be good to readjust!

Tropical Toasts

And now to relish the sweet side of avocadoes you'll need:

1) 2 slices, gluten-free rice-millet bread (or whatever you prefer)

2) 1 avocado chopped/mashed

3) 2 Tbsp. organic lemon juice

4) 1/2 banana chopped

5) 2 tsp organic, raw honey

6) shredded coconut, sea salt, nutmeg

Toast your slice of bread, spread raw honey onto it.  Add the lemon juice to the avocado and mix thoroughly.  Spread or layer the avocado onto your toast, and arrange the banana slices.  Finally, drizzle on the coconut, sea salt, and nutmeg!  Hopefully you feel like you belong on South Beach!



For the Friendly Fat Toast, you'll need ingredients 1-3 as listed above, plus:

1) 1 tbsp organic, raw almond butter

2) sea salt, cayenne pepper, and paprika to taste

Toast your slice of bread and spread the almond butter.  Mix the lemon juice in with your avocado and arrange/spread it on top of your toast.  Sprinkle the seasonings to taste and enjoy, for a spicy, creamy treat!

Get Red Carpet Ready

Academy Awards or no Academy Awards, it's nice to want to get red carpet ready- no that does not equate to or isn't limited to looking lean and sculpted.  It's a great goal to work towards to feel your best, increase love and appreciation for you, and flaunt that wherever you are and go.

But since the Oscars will be taking place in a couple of hours, it is quite fitting to chefsperiment this hors-d'oeuvre, to entertain your guests AND your health!

"Kiwicado Stuffed Sweet Peppers"

"Kiwicado" Stuffed Sweet Peppers

You'll need:

- 4 sweet peppers, washed & tops chopped

- 1 avocado, peeled and chopped

- 1 kiwi, peeled and chopped

- 1/4 red onion, finely chopped

- 1 tbsp extra virgin olive oil

- 1 apple sliced (pacific rose is delish!), you'll only need 12 slices, but you can use the rest to dip with the leftover guac

- lime, sea salt, black pepper, basil, freshly chopped green chili to taste

Servings: 4 

Prep Time: 20 minutes (this one's a bit long because of the chopping and presentation)

 
1. Wash the sweet peppers, chop the tops, and make a slice on one side to make stuffing easier and to prevent the "kiwicado" guac from oozing out.

2. Mash the avocado with a fork/masher, squeeze your lime, sprinkle the sea salt to prevent browning

3. Add the chopped onion, green chili, kiwi and combine.  Sprinkle the remaining seasonings.

4. Stuff the peppers with the "kiwicado." Place one sliced apple to fill in the cut you made on the sweet pepper, and the other two within the pepper, facing the other way (for a fancy look!)


Et Voila!  One of your appetizers taken care of at your party.  There's still time!  And remember, the nutrients from your clean, balanced diet will give you a sustainable red carpet look, with exercise to maintain your fitness- not a processed-food filled diet with a ton of exercise!
